Mixed Berry Chia Pudding

Don’t be fooled by their size.

Chia seeds are packed with fiber – helping you to feel full longer and go the bathroom with great ease!

You can toss a tablespoon of them in your smoothie or make a delicious pudding out of them.

The combo of chia seeds and mixed berries makes this recipe a powerhouse of fiber and antioxidants. You can also get creative with your own version by mixing up the toppings. Go ahead, get crazy with your chia seed pudding!


  • 1 ¾ Cup Coconut milk
  • 1/3 Cup Chia seed
  • 1 Tbs honey
  • 1 Cup Blueberries (Fresh or thawed frozen)
  • Cinnamon (To taste)


  1. Mix the coconut milk, chia seeds and honey in a bowl until well combined. Let the mixture sit for 30 minutes at room temperature or covered in the refrigerator overnight.
  2. Once thickened, layer the chia pudding into a mason jar with the blueberries. Top with a sprinkle of cinnamon to taste.
  3. Serve immediately or store in a seal container in the refrigerator until ready to eat.
