Creamy Carrot Soup

It’s so rich and creamy, it’s hard to believe it’s dairy-free. It’s also rich in vitamins and minerals that will support your healing.


  • 2 Tbs coconut oil or ghee
  • 1 large onion (diced)
  • 1⁄2 tsp sea salt
  • 2 lbs carrots (peeled and cut)
  • 1⁄2 head of cauliflower (chopped)
  • 5 Cups chicken broth
  • 1/2 Cup coconut milk
  • 1 tsp lemon juice (1/2 lemon)
  • 1 1⁄2 tsp ginger juice (1/2-inch knob)


  1. In a large pot, heat coconut oil over medium heat. Add onions and salt. Cook until softened (approx. 5-8 minutes), stirring frequently to prevent browning.
  2. Add carrots and cauliflower, cover pot and cook over low heat for 5-6 minutes, stirring frequently to prevent browning.
  3. Add chicken broth and bring to boil. After it reaches a boil, reduce heat to low and simmer 25 minutes, covered, until carrots and cauliflower are very tender.
  4. Use an immersion blender or transfer to a regular blender, to blend soup until creamy. Add additional broth to desired consistency. Add lemon and ginger juice to desired taste.
  5. Serve and enjoy!
